Intense warm spiced fruit on the nose. A proper claret with rich plummy fruit throughout, this is quite a full-bodied, food-friendly Bordeaux with a fresh, structured finish.
2 hectares of Merlot vines with an average age of 30 years. High-density planting at 6600-9000 vines per hectare on sand and iron-rich sandstone soils. Part-manual and part-machine harvest. Cold-soak before fermentation to enhance aromatics, followed by thermoregulated fermentation lasting 2 to 3 weeks with regular pigeage to enhance extraction. Ageing in French oak barriques for 8-10months.
Works with a range of dishes, from classic robust beef, game and lamb roasts or stews right through to well aged farmhouse Cheddar.
